Each year after harvest, the grape vines are pruned to ensure a good crop for the coming harvest. Drawn from the ancient tradition in winemaking regions of France, The Burning of the Canes celebration marks the end of winter, the completion of pruning and to welcome bud burst in the vineyard and what the new season can bring. Hollydene Estate at Jerrys Plains will celebrate the 2015 Burning of the Canes with a sumptuous three course feast created by chef Steve Houghton, a fabulous light show, live music and dancing and a huge bonfire made from the grapevine canes to light up the sky. Winemaker Matt Burton’s comments: This Chardonnay was produced from a single block of old, low-yielding vines. It is Hollydene Estate’s most complex white wine, offering an array of aromas including cashew, melon, peach, and spice. A smooth, seamless palate is delivered with lashings of stone fruit and quality French oak, directed by a crisp line of natural acidity. This is a style that can be enjoyed now or after several years of careful cellaring.
Food Pairing: Chardonnay, a spectacular food wine!
This Reserve Chardonnay is great paired with your favourite cheddar cheese or try it with pumpkin ravioli, mild curries with a buttery sauce or a steak béarnaise, grilled veal chops with mushrooms is also a treat.
Hollydene Estate's 'Seven Joys', a 2012 Sauvignon Blanc Semillon, is the perfect summer wine to complement a variety of dishes.
Named in honour of the family's seven grandchildren, the SSB has bright fruity characteristics which blend well with delightfully fresh Semillon acidity.
A delicious fruitiness at the front of the palate gives way to a slightly dry finish which in turn is quite refreshing. At two years of age the 7 Joys is a 'drink now' wine that has been a firm favourite throughout the year in the Hollydene Estate Cellar Door.

The drive from Newcastle to Hollydene Estate has become an easy 1hr jaunt and from Sydney just over 2 hours thanks to the new F3 freeway.
And what a scenic drive it is through the Upper Hunter. You will pass Thoroughbred studs swathed in green grass and horses until you find the large Hollydene Estate building right next to the Golden Highway, 10 kilometres west of Jerry's Plains.
Awaiting you are beautifully manicured lawns with seating under shady trees and the Hollydene Cellar Door and Vines restaurant.

The young Sem, a 2013 drop, is crisp with lemon-lime characteristics, while the older Sems, from the 2010 and 2007 vintages, offer more golden, oaky and honey characters.
